Fattoush is a Lebanese salad made of vegetables and pita bread. It’s refreshing, tasty and pretty filling because of the pita bread. It’s also one of those salads I can eat all the time and never get tired of. I made it as a side dish for our Iftar the other day and, I confess, I ended up eating only the fattoush and pretty much finished the whole bowl by myself! 🙂 Hope you like it as much as I do!
Ingredients:
- 1 head romaine lettuce
- 2 cups chopped parsley
- 1 green bell pepper
- 1 small red onion
- 2 persian or english cucumbers
- 2 tomatoes
- 1/2 cup mint
- 3-4 pita breads
Dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tsp salt
- 1/2 tsp pepper
- Juice of 1 lemon
- 1/2 cup sumac
- 1 clove of garlic, minced
Chop up all the vegetables into small pieces
I prefer to use a day or two old stale bread. But if you only have fresh pita bread then you can toast it until it is light brown and crispy. Mix dressing ingredients in a separate bowl. Add both bread and dressing to the vegetables.
Mix well and serve cold!
