Cake pops…I can’t say enough good things about them. They’re cute, fun to eat and so delicious! I’m guilty of eating about 10 or more in one sitting, but that’s about only one piece of cake so it’s ok, right? 🙂
But since I’m trying to make healthier desserts (yes, it IS possible), and since I have an abundance of dates in my house because of Ramadan, I decided to make some date pops! They’re so fun to eat like this, the kids will especially love them. And dates are very fibrous, which means eating one or two of these fills you right up and helps with the sweet cravings!
Ingredients:
- 15-20 medjool dates
- 1/2 cup almonds
- 2 tbsp of each – unsweetened shredded coconut, granola, unsweetened cocoa powder
- Lollipop sticks
Method:
Start by pitting the dates and put them in a food processor
Add almonds and chop until you have something like this. Mine conveniently turned into a big round ball all by itself. Try not to use a small food processor like the Bullet, you need something with a lot of power because the dates are so sticky. A Bullet might break.
Roll them into small balls and coat with a topping of your choice. I used granola, shredded unsweetened coconut and unsweetened cocoa powder (my personal favorite).
Put the lollipop sticks in the dates. I put glitter tape on mine to pretty them up! Enjoy!!
