I love making this salad. The mint gives it a very refreshing taste. It’s so versatile and easy to make! Best of all, it can be served with anything! Eat it plain or throw it into a falafel or chicken shawarma pita wrap. The options are endless!
Ingredients:
1 large cucumber, chopped
1 medium tomato, chopped
1/2 red onion, chopped
handful of mint leaves, finely chopped
1 Tbsp lemon juice
1/2 tsp salt
1/2 tsp sumac
1/4 tsp black pepper
1 TB extra virgin olive oil
Mix all your ingredients together and adjust seasoning. Refrigerate for at least an hour for flavors to blend. Serve cold.
