It was my first time making pumpkin pancakes, and they turned out so incredibly delicious, that I will probably make them year round. They were just the right amount of moist and fluffy!
Pumpkin Pancakes

Ingredients
- 1¼ cup pumpkin puree
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup brown sugar
- 1 tbsp cinnamon sugar
- 2 tbsp pumpkin spice
- 1 egg
- 1½ cup milk
- 2 tbsp oil
Instructions
- Mix flour, baking powder, baking soda, salt, brown sugar, cinnamon sugar, and pie spice together
- In a separate bowl mix pumpkin puree, egg, milk, and oil together.
- Slowly add the dry ingredients to the wet ones. Mix until all lumps gone and batter is smooth.
- Heat up griddle and cook pancakes on medium low heat for about ⅔ minutes on each side. Make sure to cook on lower heat setting so pancakes get cooked all the way through!
