Avocado Egg Rolls
Recipe type: Appetizer
  • 3 Avocados
  • ¼ cup sun dried tomatoes or 1 roma tomato, chopped
  • 2 TB red onion
  • 1 TB chopped cilantro
  • Juice of one lime
  • Salt and pepper to taste
  • Egg roll wrappers
  • Oil
  1. Gently mix all the ingredients together. You can use more of less of the ingredients. Some people don't like onions, so you don't have to add that.
  2. Place avocado mixture in center of egg roll wrapper. Follow instructions on the wrapper on how to close. You may need some water to help seal the wrappers.
  3. Heat some oil in a fry pan. I usually shallow fry, so I didn't need to use a lot of oil.
  4. Fry the egg rolls until golden brown on all sides, about 2-3 minutes. Place on a plate lined with paper towel.
  5. If baking, place them on a cookie sheet lined with parchment paper. Spray with cooking spray or brush on an egg wash. Bake at 350 for 15-20 minutes until golden brown. Don't forget to flip half way through.
  6. When ready to serve, cut in half at a diagonal. Serve with your favorite dipping sauces or just plain.
